What kind of rum should I use?
You definitely want dark rum for this recipe to get the fuller flavour and best combination with the batter. You can use a spiced dark rum if you want to try it but you might find you want to adjust how much of the cinnamon, nutmeg or cloves you add if you aren’t a bit fan of spicy drinks.

Can you make the batter in larger batches?
Once you make the batter to add to the drink, use an airtight container and store it in the fridge. If you have any left, you can use it if you keep it refrigerated and it will last for 1-2 weeks.
Many people like to make the batter into a log then you can easily just slice off a piece to make the drink. Wrap the log in plastic wrap and keep it around 2 inches thick. Pop it in an airtight container or a plastic bag and store it in the fridge. You can also pop it in the freezer and it will last for up to 3 months.
What you need to make Hot Buttered Rum
For The Batter Mix:
- 2/3 cup brown sugar
- 1/2 cup (1 stick) unsalted butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon vanilla extract
For The Cocktail:
- 2/3 cup hot water
- 2 tablespoons batter
- 2 ounces dark rum
- Whipped topping for topping
- Cinnamon for topping
How to make the drink
Place brown sugar and butter in a microwavable pyrex. Microwave for 1 minute.
Whisk in spices and vanilla.
To make the cocktail add two tablespoons of the batter with 2/3 cup hot water. Stir and add in rum then stir again.

Top with whipped topping and cinnamon.

Recipe tips
For a fun festive drink that’s alcohol-free, simply omit the rum from the mixture. You may need to add a little more boiling water to mix it properly.
If you want to batch create the batter for a holiday crowd, use the slow cooker. Set it on high for an hour and add the batter ingredients then stir regularly. Once it is melted and combined, add 2 1/2 cups of hot water and 1 cup of rum then mix. Set on warm and then serve and finish the topping.
For an alternative, you can leave out the boiling water and add apple cider instead. This will make the drink a little sweeter and obviously a little stronger in the alcohol volume!
