Some cocktails seem more for the warmer weather than others. And when it comes to frozen cocktails, they scream summer. Although there’s nothing to stop you from enjoying them at any time of the year. For a real summery cocktail complete with in-season fruit, try this Frozen Strawberry Daiquiri cocktail.

How do you make a classic Daiquiri?

The Daiquiri is a classic rum cocktail, a sour drink that uses just three basic ingredients and has led to loads of offshoots like the martini and the margarita. The original Daiquiri uses:

  • 1 ½ ounces rum
  • ½ to ¾ simple syrup (add to taste)

Everything is added to a cocktail shaker, with ice. Shake it and strain into a cocktail glass then serve. If it tastes too tarty, then a little more simple syrup will sort that out. If you do want to add a garnish, a lime wedge is usually chosen.

What is simple syrup?

If there’s one thing you need to learn to make as a cocktail fan, it is simple syrup. You can buy it from the store but you will often run into different variations with extra flavours added so knowing how to make the basic version will help.

Here I’ve included two recipes, a standard sugar syrup and a sugar-free version. So if you want to cut back on the sugar intake but still want to enjoy the drink, then give this one a try.

What you need to make Frozen Strawberry Daiquiri

Simple syrup:

  • ½ cup granulated sugar
  • ½ cup water

(or) Sugar-Free Simple Syrup:

  • ¼ c. powdered monkfruit sweetener
  • ½ c. water

Ingredients:

  • 2½ c. fresh strawberries, hulled
  • ¼ c. fresh lime juice
  • 4 oz. light rum
  • 6-8 large ice cubes

Garnish: lime wheels and/or fresh strawberries

How to make the recipe

STEP 1: Prepare the simple syrup by combining the sugar or monkfruit sweetener and water in a small skillet or saucepan. Stir to combine and heat until the sugar or sweetener dissolves completely, approximately 3-4 minutes. Remove from heat and set aside to cool.

STEP 2: Place the strawberries, lime juice, rum, and one-quarter cup simple syrup into a blender and blend until smooth.

STEP 3: While the blender is still running, add the ice a little at a time until thoroughly combined. Turn blender off and remove the lid. Taste and add additional simple syrup, if desired, and blend for another 30 seconds to combine.

STEP 4: To serve, pour into glasses and serve immediately garnished with lime wheels and/or whole strawberries.

Storing the recipe

You can store sugar syrup in a container or bottle in the fridge for around 1 week. So if you plan to make the drink a few times, make a small batch and keep it in the fridge.

Recipe tips

If you want to make a mocktail version of this, take out the rum and replace it with one-quarter cup of water.

How do I make a slushy drink?

Place the rum, 1/2 cup of the lime juice, 1/4 cup of the simple syrup, strawberries, and ice cubes into a blender and pulse until completely blended with a slushy consistency.

What is the best rum for this cocktail recipe?

White rum – Bacardi is my white rum of choice but you can use any, like Havana Club, Appleton, Cruz.
