Occasionally, in order to top off the glasses and provide a lovely bubbly look, I’ll add a little bit of club soda or lemon-lime soda.

What is Blue Curacao?

Blue Curacao is a blue liqueur prepared from orange peel slices of dried Lahara citrus fruit. The fruit is produced on the island of Curaçao. Because of the citrus taste, it has a similar flavor to triple sec, and it contains added color. It’s especially popular in tropical cocktails, like the Tipsy Mermaid, Blue Lagoon, and Blue Hawaiian.

What you need to make a Tipsy Mermaid

  • 1 Can White Claw Watermelon Seltzer (12 ounces)
  • 3 Ounces Pineapple Juice
  • 2 Ounces Rum
  • 2 Ounces Blue Curacao
  • 1 Ounce Fresh Lime Juice (plus lime slices for garnish)

How to make the recipe

In a mixing container like a tiny pitcher, combine the pineapple juice, blue curacao, lime juice, and rum. Stir lightly.

Pour in the White Claw and gently mix it with a spoon.

Serve in highball glasses with ice cubes, a slice of lime, and/or pineapple slice or maraschino cherries for garnish.

Ingredient substitutions

Seltzer – You may use any flavor of White Claw you like, but I think watermelon is the greatest. Any seltzer works. Just be sure that the flavor matches the drink or you’ll wind up with a odd-tasting beverage.

Lime juice – If you don’t have lime juice, try using lemon juice instead, in a pinch. It still tastes wonderful!

Flavored rum – Spiced or banana rum is a wonderful choice in addition to plain rum for an extra zing. This gives it a tropical island atmosphere.

Mango – Add a few pieces of mango to your bowl. The flavor combination will surprise you! For real! 

Ice – Make a slushy drink by blending the ice with your blender. For this drink, thick straws are ideal!!!!
