What is Irish Soda Bread?

Irish soda bread is a traditional bread that uses baking soda as the leavening agent instead of yeast. This quick bread has been a staple in Irish households for generations, where it was made with basic ingredients found in most kitchens. Our roll version takes this classic recipe and adds dark beer and oats for extra flavor and texture.

Ingredients

  • All-Purpose Flour: The backbone of our rolls, providing structure and ensuring they hold their shape while staying tender inside
  • Rolled Oats: These add a wonderful nutty flavor and hearty texture to the rolls, plus they make a beautiful garnish on top
  • Dark Beer: Guinness or another dark beer brings richness and depth to these rolls, complementing the oats perfectly. Try it in our Beer Brownies for another delicious treat!
  • Buttermilk: Provides tanginess and reacts with the baking soda to help the rolls rise
  • Molasses or Honey: Adds a subtle sweetness and helps create a beautiful golden-brown crust
  • Baking Soda: The key leavening agent that helps the rolls rise without the need for yeast
  • Vegetable Oil: Keeps the rolls moist and tender
  • Salt: Enhances all the flavors and ensures your rolls don’t taste flat

Substitutions and Additions

  • Whole Wheat Flour: Replace up to half the all-purpose flour with whole wheat for a heartier roll
  • Quick Oats: Can be used in place of rolled oats, though the texture will be slightly different
  • Non-Alcoholic Beer: Any dark non-alcoholic beer works well if you prefer to avoid alcohol
  • Plant-Based Buttermilk: Mix 1/4 cup plant-based milk with 1 teaspoon lemon juice as a dairy-free option

Instructions

Start by preheating your oven to 400°F and line a baking sheet with parchment paper. Mix your dry ingredients (flour, oats, salt, and baking soda) in a large bowl

Whisk together your wet ingredients (beer, buttermilk, oil, and honey) in a separate container

Combine wet and dry ingredients until you have a sticky dough

Portion the dough into 6 rolls on your prepared baking sheet. Sprinkle with additional oats or sesame seeds

Bake for 18-20 minutes until golden brown. Cool for at least 15 minutes before serving

Recipe Tips

  • Don’t overmix the dough – stir just until the ingredients are combined to ensure tender rolls
  • Use room temperature buttermilk for better mixing with other ingredients
  • The dough will be sticky – use a spoon dipped in water to help shape the rolls
  • Look for a deep golden brown color as your signal that the rolls are done

Serving Suggestions

These versatile rolls pair beautifully with so many dishes. Serve them alongside a Hot Beer and Cheese Dip for an amazing appetizer spread. They’re perfect with Irish stew, corned beef and cabbage, or any hearty soup.

For breakfast or brunch, split and toast them, then top with butter and jam. They also make excellent sandwich rolls for lunch. For a truly Irish experience, serve them with Bailey’s cocktails for a festive touch.

Storage & Reheating

These rolls are best enjoyed the day they’re baked, but you can store them in an airtight container at room temperature for up to 2 days. To refresh them, sprinkle with a few drops of water and warm in a 350°F oven for 5-7 minutes.

You can also freeze the rolls for up to 3 months in a freezer-safe bag. Thaw at room temperature and reheat as directed above.

Recipe FAQ

Can I make these rolls without beer? You can substitute the beer with additional buttermilk or a mixture of coffee and water to maintain the dark color and rich flavor.

Why are my rolls dense? This usually happens from overmixing the dough or using old baking soda. Make sure your baking soda is fresh and mix just until ingredients are combined.

Can I make smaller rolls for dinner parties? Yes! Divide the dough into 12 smaller portions instead of 6. Reduce the baking time to 15-16 minutes.

How do I know when the rolls are done? The rolls should be golden brown on top and sound hollow when tapped on the bottom. A toothpick inserted into the center should come out clean.
